Betty is a traditional dessert in the United States and is usually prepared with apples, but other recipes can have pears or berries. Brown Betty is associated with the same family as apple crisps and cobblers. As per “The Oxford Companion to Food,” the dish received its name from its creator — an African-American woman of the same name. The “Brown” in Brown Betty is said to symbolise her skin colour, having mixed racial origins.
